Sausage Gravy

Sausage Gravy Recipe

Sausage gravy is a classic Southern recipe.  Serve over buttermilk biscuits or grits for a hearty breakfast.

Yield: Makes 2 cups

Ingredients


  • 8 ounces pork sausage 
  • 1/4 cup all-purpose flour 
  • 2 1/3 cups milk 
  • 1/2 teaspoon salt 
  • 1/2 teaspoon pepper

Preparation

  1. Cook sausage in a large skillet over medium heat, stirring until it crumbles and is no longer pink. Remove sausage, and drain on paper towels, reserving 1 tablespoon drippings in skillet.
  2. Whisk flour into hot drippings until smooth; cook, whisking constantly, 1 minute. Gradually whisk in milk, and cook, whisking constantly, 5 to 7 minutes or until thickened. Stir in sausage, salt, and pepper.


Praline Bundt Cake

Prep: 30 min.; Bake: 1 hr., 22 min.; Cool: 1 hr.

Yield: Makes 12 servings

Ingredients


  • 1 cup chopped pecans
  • 1 cup butter, softened 
  • 1 (8-oz.) package cream cheese, softened 
  • 1 (16-oz.) package dark brown sugar
  • 4 large eggs 
  • 2 1/2 cups all-purpose flour 
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt 
  • 1 (8-oz.) container sour cream 
  • 2 teaspoons vanilla extract
  • Praline Icing
  • Sugared Pecans

Preparation

  1. 1. Arrange 1 cup pecans in a single layer on a baking sheet. Bake at 350° for 5 to 7 minutes or until toasted. Cool on a wire rack 15 minutes or until completely cool. Reduce oven temperature to 325°.
  2. 2. Beat butter and cream cheese at medium speed with an electric mixer until creamy. Gradually add brown sugar, beating until well blended. Add eggs, 1 at a time, beating just until blended after each addition.
  3. 3. Sift together 2 1/2 cups flour and next 3 ingredients. Add to butter mixture alternately with sour cream, beginning and ending with flour mixture. Beat batter at low speed just until blended after each addition. Stir in toasted pecans and vanilla. Spoon batter into a greased and floured 12-cup Bundt pan.
  4. 4. Bake at 325° for 1 hour and 15 minutes or until a long wooden pick inserted in center comes out clean. Cool cake in pan on a wire rack 15 minutes; remove from pan to wire rack, and let cool 30 minutes or until completely cool.
  5. 5. Prepare Praline Icing, and spoon immediately over cake. Sprinkle top of cake with Sugared Pecans.


Fried Green Tomatoes

Fried Green Tomatoes Recipe

No one does Fried Green Tomatoes like Southern Living. The cornmeal and flour crust is what sets this recipe apart from others.

Yield: Makes 4 to 6 servings

Ingredients


  • 1 large egg, lightly beaten 
  • 1/2 cup buttermilk
  • 1/2 cup all-purpose flour, divided 
  • 1/2 cup cornmeal
  • 1 teaspoon salt 
  • 1/2 teaspoon pepper
  • 3 medium-size green tomatoes, cut into 1/3-inch slices
  • Vegetable oil 
  • Salt to taste 

Preparation

  1. Combine egg and buttermilk; set aside.
  2. Combine 1/4 cup all-purpose flour, cornmeal, 1 teaspoon salt, and pepper in a shallow bowl or pan.
  3. Dredge tomato slices in remaining 1/4 cup flour; dip in egg mixture, and dredge in cornmeal mixture.
  4. Pour oil to a depth of 1/4 to 1/2 inch in a large cast-iron skillet; heat to 375°. Drop tomatoes, in batches, into hot oil, and cook 2 minutes on each side or until golden. Drain on paper towels or a rack. Sprinkle hot tomatoes with salt.

Recipe #1 Southern Sweet Iced Tea
Ingredients3 Family size tea bags
2 Cups of cold water
1 Cup of sugar

DirectionsWe in the south make the best iced tea you'll find. Maybe it's how it's done, or maybe it is the water in the south, or maybe it's just that a southern belle has put a lot of TLC into making the tea. Who knows!
We recommend Luzianne Tea Bags if available.
Place the two cups water in a pot and add the tea bags. Bring to a boil, do not continue boiling. Remove from heat and let steep. Pour warm tea into empty pitcher. Add the sugar and stir until the sugar is dissolved. Fill remaining pitcher with cold water.
Optional - some women say they use less water and add ice to the tea.
Recipe #2 Southern Sweet Iced Tea
Ingredients:3 Family sized tea bags
a pinch baking soda (about 1/4 teaspoon)
1 to 1 1/3 cups of sugar

Directions:Here is my never fail sweet tea...
Everyone (even yankees) loves it.
Bring 3-4 cups of water to a boil. Add a pinch of baking soda to the water and add 3 family sized tea bags. Remove from heat and cover. Allow to sit for at least 10-15 minutes. Pour into gallon pitcher and add sugar. Then fill with cold water. Refrigerate.
*the soda takes out the bitterness and darkens the tea....this small amount doesnt change the taste.
Recipe #3 Sun Tea (no cooking!)
Ingredients:3 Family sized tea bags
1 quart water
Glass or translucent pitcher

Directions:Here is my easy, no work needed...Sun Tea
Put the water and tea bags in the pitcher. Put in the Sun and let sit. In about 30 minutes to an hour you have tea. Add cold water to desired strength. Refrigerate.
This recipe is great for guys who can't cook!
Note: The sun does not usually heat water up enough to kill all the bacteria, so you should take proper cleaning procedures and throw out the tea if it ends up looking weird (extra thick, has strands in it, is syrupy).



Southern Sweet Tea Southern Living

It's known as the house wine of the South, and every family has a signature brew.

Ingredients


  • 3 cups water
  • 2 family-size tea bags
  • 3/4 cup sugar
  • 7 cups cold water

Preparation

  1. 1. Bring 3 cups water to a boil in a saucepan; add tea bags. Boil 1 minute; remove from heat. Cover and steep 10 minutes.
  2. 2. Discard tea bags. Add sugar, stirring until dissolved. Pour into a 1-gal. container, and add 7 cups cold water. Serve over ice.
